Happy 4th of July!
The 4th of July is one of our favorite holidays. It reminds us of our summers at Lake Michigan celebrating the holiday watching parades, cooking out, lots of blueberries & fireworks. Although we now celebrate the 4th on the opposite coast, we make sure to keep our family traditions alive. Tomorrow morning we will throw on a favorite nautical stripe shirts and of course a boutonniere to match, hop on the bikes and head down the road for a local parade. Followed by blueberry filled meals!
We recently found a recipe for Blueberry Salsa from the good folks at Southern Living. The plan is to make this for an afternoon cookout…that is if we don’t eat it all before we get there! If you are in need of a little blueberry deliciousness try it out and let us know what you think!
2 cups coarsely chopped fresh blueberries
1 cup whole fresh blueberries
1/4 cup fresh lemon juice
3 tablespoons chopped fresh cilantro
2 jalapeno peppers, seeded and minced
1/3 cup diced red bell pepper
1/2 teaspoon kosher salt
Toss together coarsely chopped fresh blueberries, whole blueberries, lemon juice, cilantro, jalapeno peppers, red bell pepper & salt in a large bowl. Serve immediately or cover & chill for 8 hours.
